It was a fabulous patriotic weekend in a gorgeous little southern town which had me thinking about my favorite parts of the summer. Of, course, I’m talking about food.
Yes, yes, summer vacationing is nice. I did just get back from Costa Rica:
And I am SO excited to be going to Comic Con in 15 days.
But the very best part about the summer, to me, is the food.
If you’re #blessed to live in a place that grows great tomatoes and greens all year long, maybe you don’t appreciate the deliciousness of summer like I do. (There is nothing, I mean NOTHING, like an August tomato salad!)
There is just something about food in the summer that brings me back to my childhood, makes me feel great and more energized, despite having the same hectic schedule I keep October through April, and just screams “HEY, IT’S SUMMER! Stay up a little later! Drink that extra beer! Enjoy another scoop of ice cream!”
This weekend we had the quintessential summer meal in Virginia: Blue crabs and corn (and some shrimp); Plus I made caprese salad.
We hammock-ed, We fire-worked. We drank. We slept, and we ate!
All that doing nothing on the perfect summer holiday weekend was exhausting. Thankfully we had the pick me up from International Delight’s line of Iced Coffee for those moments!
