Normal Eats: International Delight Iced Mocha Popsicle Recipe

If you’ve been hanging around these parts for the last few months, you may have seen a few posts about International Delight… well, we’re back again this time with a recipe that’s gonna knock your flip flops off. What says summer more than popsicles? And if you’re like me, living in SoCal it’s already heating up so time to cool off… AND time to caffeine up. Who’s to say you couldn’t grab one of these on your way to work? Forget a coffee shop run, just grab one of these babies from the freezer and hit the trails. Caffeine and a cool down in one! We’re so freaking smart.

These are super simple, guys. Line up your moulds… mine were 99 cents from Ikea last summer… I was going to buy those super fancy ones and then I saw these and was like, why waste the money? 99 cents it is!

I melted chocolate with a little bit of coconut milk… but you can use whatever you have, milk, nuts milks, etc. I just don’t drink dairy so that’s that. Then dump a spoonful in the bottom of your mould.

Let that cool in bottom for a bit so you have a nice bit of chocolate at the tip… the tip… heh. OK, then it’s time to whip out the International Delight. This time I bought the Iced Coffee Mocha flavor in the new Light version which has 1/3 less calories yall! Save on those calories where you can, right? So you can have chocolate tipped popsicles, right?

Then throw those things in the freezer on top of the Porcini Mushroom lasagna and next to the Trader Joes meatless meatballs and the leftover Holiday Gardein.

Then viola! It’s showtime!

International Delight Iced Mocha Popsicle Recipe

1/4 Cup Chocolate Chips (I used a mix of milk and semi sweet)
3 Tablespoons Coconut Milk (or any kind of Milk)
1 Cup International Delight Iced Mocha Light

Directions:
1. Melt chocolate in the microwave with the coconut milk making sure to go slow, 10 seconds at a time or so and stirring a lot.
2. Spoon chocolate mixture into the bottom of the mould
3. Pour the Iced Mocha into the mould
4. Freeze solid
5. Watch One Direction: This Is Us on cable while you wait for the pops to freeze… cause that’s what I did and I maybe cried at little during the Liam’s Dad part
6. Pop those suckers out of the moulds and “take back 10” this summer!
7. Watch 9 to 5 on cable while eating said popsicle and working on a new client proposal
