Normal Eats: Weekend Pancake Recipe!

Memorial Day weekend was one of those weekends you pray for: much needed, lazy and felt like it went on for more than it’s allotted three days. It was the kind of weekend you rolled out of bed and thought, hey I’ll make pancakes instead of running to grab a bagel or to the nearest diner before you’re off to cram in all your errands before the work week starts all over. So, armed with time and some SUPER LEGIT maple syrup from Vancouver that I gave to my boyfriend (but then took it back for this), it was time to get to work. And by work I mean like the bare minimum! YAY!

So I basically mashed together Martha Stewart’s pancake recipe with my own pancake recipe to create an unholy union of East Coast WASP meets West Coast laid back Cali girl.

Weekend Pancakes Recipe

1 cup All Purpose Flour
2 tablespoons sugar
2 teaspoons baking powder
1/2 teaspoon salt
1 cup Cashew Milk (I use nut milks but if dairy’s your thing, go for it)
2 tablespoons melted butter (I browned mine, cause I LOVE brown butter)
1 egg
1 teaspoon cinnamon. Add more if you wanna
Dash of Nutmeg
1 teaspoon GOOD vanilla (that was for the Ina Garten fans out there)
Oil or melted butter (for greasing the pan)
TOPPINGS!

IMG_4922Set up a sweet toppings bar for those pancakes. I’m talking Maple Syrup (the real deal), Aunt Jemima (the fake shit), Nutella, Speculous, Honey, Butter, fruit (cherries in this case), you get the idea!

Directions

1. Turn on your oven to 200 degrees, throw a pan in there for keeping your cooked pancakes warm while you cook the rest
2. Mix all the wet stuff together (milk, egg, vanilla, butter)
3. Mix all the dry stuff together (flour, sugar, powder, salt, cinnamon, nutmeg)
4. Mix the wet and dry together. Lumps are ok, don’t overmix this!
5. Heat a skillet to medium, add some butter or oil to grease the pan.
6. I use a 1/4 measuring cup (not full) to spoon mixture onto the pan. The pancakes will be about 3 inches across. You can fit a few in a pan.
7. Cook for a few minutes until that bubble popping thing happens, then flip them and cook through. Either serve immediately or put the cooked pancakes in the over while you cook the rest.

Makes about 15 pancakes.

IMG_4923IMG_4927Serve with nuttin’ or add in some eggs and fake bacon and whatever your heart desires. Then make your boyfriend clean it up while you take a nap.
